Ingredients:

    • 800 g of snow peas
    • 1 clove of garlic
    • 1 small onion
    • 1 bunch of basil
    • 4 red tomatoes
  • Salt to taste
  • extra virgin olive oil
  • 1 tablespoon of chopped almonds

The recipe for Snow peas in a pan

  • Clean the snow peas by trimming the two tips and eliminating the wire running sideways.
  • Wash the snow peas in fresh water and then boil them in lightly salted boiling water for 5 minutes
  • Chop the basil together with the almonds.
  • Drain the snow peas
  • In the meantime, in a large pan, brown the onion cut into quarters and the garlic clove in a few tablespoons of oil
  • When they start to brown add the snow peas and the chopped tomatoes.
  • Stir and cook over high heat for a few minutes, to get the flavour.
  • Season with salt, add the chopped basil and almonds, stir and then remove from the heat
  • Serve the snow peas garnishing with fresh basil leaves
