The haggis is the Scottish national dish, a very simple dish made with chopped sheep offal and then mixed with oatmeal but definitely not for everyone. Here are the steps for the haggis recipe.

Ingredients

  • Sheep stomach 1
  • Oats 400 g
  • Herbs 1 tbsp
  • Heart 1
  • Salt 1 tbsp
  • Pepper 1 tbsp
  • Cork 200 g
  • Meat broth 300 ml

Preparation

  • Wash the stomach in cold water and then let it soak in cold salted water for about a night.
  • Place the offal in a pan that can cover it entirely with cold water, then cook slowly until it becomes tender (it will take about a couple of hours). Once ready, let it rest so that it cools down.
  • Once cooled, chop finely and mix it with the oatmeal, adding the broth to the mixture, and then proceed by adding both the lard and the onions, making sure that they are all thoroughly mixed together.
  • Then proceed to fill the previously cleaned stomach with the mixture, making sure that the oatmeal tends to expand. Then sew the prepared haggis and, with a small needle, prick.
  • Then boil for about 3 hours in boiling water. In the end, you can serve it with a side dish of mashed turnips and potatoes.
