The snow peas, also known as "mangetout” or " Taccole“are very special food. They are called "Mangia Tutto" precisely because they are eaten whole, that is, including the skin which, in snow peas, is really very thin. This characteristic kidney pea is a food rich in fibre, precious for health in general, indicated in particular for those with intestinal problems.

How to cook Snow peas

Consuming snow peas is a great way to deal with the change of season and intestinal irregularities in a natural way. However, to preserve all the qualities of the snow peas it is important to cook them quickly in a little salted water and then flavour them in the way you prefer.

Snow peas can be:

  • sauté with garlic and oil
  • sauté with tomato sauce or chopped tomatoes
  • jump with the soy sauce
  • blend to obtain a puree
  • season with a vinaigrette or other sauce
  • Use them to prepare omelettes, quiches, risottos, etc.

Snow peas in a pan: the ingredients

Ingredients:

    • 800 g of snow peas
    • 1 clove of garlic
    • 1 small onion
    • 1 bunch of basil
    • 4 red tomatoes
  • Salt to taste
  • extra virgin olive oil
  • 1 tablespoon of chopped almonds

The recipe for Snow peas in a pan

  • Clean the snow peas by trimming the two tips and eliminating the wire running sideways.
  • Wash the snow peas in fresh water and then boil them in lightly salted boiling water for 5 minutes
  • Chop the basil together with the almonds.
  • Drain the snow peas
  • In the meantime, in a large pan, brown the onion cut into quarters and the garlic clove in a few tablespoons of oil
  • When they start to brown add the snow peas and the chopped tomatoes.
  • Stir and cook over high heat for a few minutes, to get the flavour.
  • Season with salt, add the chopped basil and almonds, stir and then remove from the heat
  • Serve the snow peas garnishing with fresh basil leaves
